Instructions – Made From Scratch

These portion sizes serve up to 4 people. 

– 8 medium sized Russet Potatoes
– Pork Shoulder: 2 lb
– 1 Tablespoon Salt
– 1 Tablespoon Pepper
– 3 Tablespoon Olive Oil
– 2 Cups Of BBQ Sauce
– 1 cup shredded cheese of your choice
– ½ cup sour cream
– ½ cup sliced scallion
– ½ cup sliced red onion

1. Cut the potatoes into slices and then cut these slices into strips of around ½ inch (1 cm)

2. Preheat the oven to 425°F (220°C) while you place the potato slices on a sheet of baking paper with the pork shoulder by their side. 

Please make sure that the potato slices and pork do not touch each other. 

3. Now spray olive oil over the potatoes and sprinkle the potatoes and pork with salt and pepper. Rub the potato strips together to coat them with salt and pepper evenly. 

4. Pour one cup of barbecue sauce over the pork and rub it on all sides to coat the pork evenly. 

5. Now bake this mix of potato strips and pork in the preheated oven at 425°F (220°C) for 45 minutes. 

6. Remove the fries and place the pork at the center of the tray. Place the tray in the oven again and bake the pork for two hours at 350°F (175°C). 

7. Remove the pork from the oven and place it in a large bowl to shred it with two forks. 

8. Mix the pork with the remaining cup of barbecue sauce. 

9. Take a baking tray or skillet and spread half of the fries on its surface. Spread half of the pulled bbq pork, cheddar cheese, sliced scallions, red onion, and cheddar cheese in an order of your liking. Repeat the same layer of ingredients over the existing layer and bake for 15 minutes until the cheese melts.
